Zpaghetti or Zagliatelle Bolognese![]() I was a little cynical when I first stumbled across this concept.....using zucchini in the place of pasta but I have to tell you......it works. If you have issues with gluten, are trying to reduce carbs, lose weight, get clean or are following a paleo diet, using zucchinis is a healthy and fabulous way to enjoy your Bolognese. You don't need any fancy equipment to enjoy it either. A humble razor peeler will give you tagliatelle style ribbons in moments.
For the Zpaghetti style, I have a slicer which has a Julienne setting. There are loads of inexpensive options available. See here, here and here. I have experimented and used a normal cheese grater on the fattest cheese setting, grating the zucchini lengthways. It does work, but you will have a thinner ribbon that will require only a very quick dip in the pan to heat it. Just as delicious! |
