Too Easy Breakfast Bars
When I had my first child, I survived solely on these breakfast bars, or various versions of, for weeks. I'd make double batches and keep them in the fridge and freezer, knowing that amidst the crazy newborn haze, I always had something healthy to get my hands on.
It's a one bowl, chuck-it-all-in kind of recipe using whatever you have in the cupboard. The recipe can be used for bars or individual cookies and they freeze brilliantly. If you're a busy person (who isn't?), these are a great way to fuel yourself and your kids at any time of day. I have used this recipe with grated apple, grated carrot, pumpkin puree, all nuts, all seeds, extra spice.
