I love to make in batches and then freeze. It saves loads of time and means you don't eat the same thing days in a row. It also gives me a great sense of pleasure (because I'm a guts) to have treats and delicious food only minutes away at all times.
Most of the recipes I suggest are ideal for the freezer.

Apple & Cinnamon bread by the Healthy Chef. Went down a storm with adults and kids at my son's birthday party. Super easy too. Great to freeze in slices for breakfast, snacks, guests. The recipe uses spelt flour but you could use any of your choice.

Zucchini and haloumi fritters. Deeeeelish! Very easy to make, great to freeze, kids will eat them. Once you get the hang of them you can put any amount of veggies/ rice/ quinoa/ herbs in there.

I love Mexican food. These roasted veggie and black bean burritos are so tasty and easy enough to chuck together mid week. I followed the recipe a few times and now just adapt depending on what's in the cupboard. You could use different veggies, different beans and add meat in as well. I served these for a mid week dinner with friends and instead of baking them in the oven, put the sandwich toaster in the centre of the table - let everyone make up their own and toast them as they go. Sharing prepping and eating - my favourite kind of dinner!
Haven't tried freezing but can't see why the filling wouldn't freeze well in small batches. |
I make these Banana & Oatmeal Cookies pretty much every week. They are the ultimate chuck-it-all-together recipe - only need a bowl and your hands. They service our family for breakfast on the go, no-time-to-eat anything-else-snack, freeze for later, take to work, the park....etc etc. Now I'm comfortable with the recipe I also experiment a bit and adapt it depending on what I have in.....try it with any/ all of these....chopped nuts, seeds, some peanut butter, almond meal, grated apple, even grated pumpkin and spices last week. My top tip is to take them out of the oven when they have a good brown colour on them - even if it means longer than the recipe. Guaranteed to be a chewier and tastier cookie.

My ultimate panacea......being able to eat indulgent sweet food every single day with no guilt. This recipe is the bomb. Frozen bananas in food processor = amazing soft serve creamy banana ice cream. Add in any number of variants and you have HEALTHY ICE CREAM. Some of my daily additions are......coconut, coconut milk, dates, mango, frozen berries, chocolate chips, cacao powder, nuts & caramel sauce. Check out these other ideas here and here.

The Healthy Chef does it again. A brilliant jam recipe with no mad sugar injection and no preservatives. Full of natural goodness, fibre and omega 3s from the chia seeds (available in all supermarkets). Takes minutes to make. I've been having it on toast, with yoghurt and with banana ice cream. Kids love it too. A new classic in my household. Smashed Berry & Vanilla Jam. FYI I didn't have the exact fruit Teresa suggests so I used frozen mixed berried that had been defrosted, was delicious.

Easiest Chocolate Mousse ever. 5 minute prep, delicious, healthy and kid-friendly too (making & eating!)
This is a no sugar (ie fructose free) recipe using Rice Malt Syrup but you could just as easily use honey, maple or agave in place. Chia seeds and Rice Malt Syrup widely available at supermarkets. I'd recommend sticking it all in a blender/food processor if you have one. Takes seconds. The Chia seeds absorb multiple times their weight in liguid which is what makes this mousse set. They are tasteless but full of fibre, protein and omega 3s so this chocolate mousse is kinder on the belly than cream, eggs and sugar. |
